PURPOSE: Provided are a composition of pork cutlet using a herb sauce and a preparation method thereof, thereby providing pork cutlet which contains the taste and flavor peculiar to herbs and satisfies Asians' appetite. CONSTITUTION: In a composition of pork cutlet using a herb sauce, pork meat is soaked in stock prepared by boiling medicinal herbs, such as cinnamon, balloonflower, jujube, licorice, Angelica gigas Nakai, Ligusticum chuanxiong and Mori Folium. The soaked pork meat is coated with a seasoning agent consisting of diced ginseng, fresh chest nut, jujube, Cortinellus shiitake, pear, garlic and onion. Then it is coated with frying coat and deep-fried.
