A foamed dry meat product mav be prepared by emulsifying comminuted meat material, water, salt, and flavouring, and then drying the emulsion by the application of microwave energy. Air, preferably heated, may be circulated through the microwave oven during the drying. Prior to drying, the emulsion may be subjected to heat processing or chilling, and to slicing, balling, or chipping. Extenders such as milk solids and flour may be incorporated in the emulsion. A wide range of flavou ring is set forth, including fruit and other sweet flavours. |
