FIELD: food industry. SUBSTANCE: invention relates to food-concentrate technology, in particular to drink concentrate production. Method is distinguished by that, prior to be peeled, bananas are treated with preparation obtained from biomass of micromycete Pythium ultimum according to given technology and aged for 2 to 5 h.
