The invention concerns a process for producing a food grade stable oil-in-water emulsion, which method comprises producing a preemulsion of the oil , the water , the emulsifier and the other ingredients and pumping said preemulsion at a pressure between 5 and 500 bar through a pipe comprising at least one plate, said plate presenting at least one bore to obtain the emulsion.
