N-LONG-CHAIN ACYL ACIDIC AMINO ACID AND ITS PRODUCTION

PROBLEM TO BE SOLVED: To provide an industrially simple method by which an increase in the free fatty acid content can be suppressed without affecting the fragrance of the product when removing a hydrophilic organic solvent used for producing an N-long-chain acyl acidic amino acid. SOLUTION: When a hydrophilic organic solvent is removed by distillation from a mixed liquid containing an N-long-chain acyl acidic amino acid and water in a mixed solvent of water with the hydrophilic organic solvent, the removal by distillation is carried out by an evaporation method using a spray evaporator in which the mixed liquid is converted into a gas-liquid mixed phase stream and sprayed on the interior of the evaporator to evaporate the solvent. The temperature of the mixed liquid does not exceed 90 deg.C and the solid concentration in the liquid is kept at 5-70 wt.% at the time of distillation.
