摘要 PROBLEM TO BE SOLVED: To produce a soybean protein hydrolyzate with a lowβ-conglycinin content useful in the food field or the like by making a proteolytic enzyme act on a soybean protein at a pH and a reactional temperature within specific ranges and thereby selectively hydrolyzing only theβ-conglycinin. SOLUTION: A proteolytic enzyme such as an acidic protease (preferably at a concentration of 0.01-0.1% based on solids in an aqueous suspension containing a soybean protein) is made to act on the soybean protein at pH 3-4.5 and 50-90 deg.C reactional temperature to provide the soybean protein hydrolyzate with a lowβ-conglycinin content at >=1.5 ratio of the glycinin/β- conglycinin of the soybean protein hydrolyzate and 5-20 wt.% ratio of the protein soluble in trichloroacetic acid to the whole protein.
