Preparation of ice-cream using cooled pasteurised ingredients

Preparation of ice-cream comprises pasteurising a mixture of sugar and/or substances containing sugar and optionally eggs or substances containing egg white or yolk, milk or substances containing milk, fruit and flavourings and/or other additives. The mixture is cooled and processed in a machine for making ice-cream before being frozen. Prior to processing in the ice-cream machine the mixture can be frozen and defrosted.
