<p>PROBLEM TO BE SOLVED: To solve the problems of special smell and of requiring much time for preventing oxidation in a salted rice-bran paste for pickling. SOLUTION: A raw material for a pickle bed is prepared by packing dry soybean curd refuse and yeast together with a drying agent or packing dry soybean curd refuse, yeast and salt or sugar together with a drying agent. It is preferable that the water content of the dry soybean curd refuse is 10-13%, and the yeast and salt or sugar are added to 1kg of the dry soybean curd refuse in amounts of 10g-40g and 100g-700g, respectively.</p> |
