Product to prevent the scalding of fruits intended for cold storage. It comprises the association formed by ethoxyquin in a proportion of 0.1 per cent to 70 per cent by weight, preferably 32.4 per cent by weight, and diphenylamine between 0.1 per cent and 30 per cent by weight, preferably 13.9 per cent by weight, with the incorporation of surfactants, stabilizers, solvents and inert substances in a proportion of between 1 per cent and 95 per cent by weight. Applicable to the treatment of pieces of fruit for prevention of the scalding thereof.
