PURPOSE: To provide a baking improver composition which can easily be divided with hands for the unit of a little quantity while being formed into uniform solid containing a baking enhancer and a binder, improves workability and is effective for baking bread. CONSTITUTION: This baking improver composition contains more than one kind of baking improvers and is formed into uniform solid containing 5 to 30 wt.% of binders more than one kind selected from edible oil, fat, emulsifier, fat degraded product, its ester, ether, water and their combination so as to destroy the shape of solid in the case of use for mixing dough. In this case, it is preferable lecithin is contained in 20 to 30% as the binder and the baking emulsifier. |
