PURPOSE:To produce a low-cholesterol yolk oil scarcely causing degenerative diseases such as arteriosclerosis or hyperlipidemia. CONSTITUTION:A prescribed amount of beta-cyclodextrin is added to raw yolk and the obtained mixture is stirred, heated and ground. The resultant ground material is extracted with a non-polar organic solvent such as hexane or ether, thus producing the objective low-cholesterol yolk oil in which >=95wt.% yolk cholesterol is removed. |
