PURPOSE:To prepare the titled food treated under high temperature and pressure, keeping its excellent appearance and palatability even after the storage for a long period, by using dried rice obtained by drying hydrated rice converted to alpha-form. CONSTITUTION:Hydrated rice converted to alpha-form is dried at 25-140 deg.C, preferably 25-100 deg.C under a condition to prevent the vaporization of the water at the inside of the rice grain, by sun drying, air drying, hot-air drying, etc. to obtain dried rice having a water-content of <=15%, preferably 11-13%. The dried rice is put into a packaging container together with water and optionally various ingredients, seasonings, etc., sealed, and treated under high temperature and pressure by a conventional method. |
