PURPOSE:To stably accumulate the objective compound at a high concentration by treating a specific compound with a microbial strain in the presence of sulfite ion, etc. CONSTITUTION:A microbial strain (A) capable of hydrolyzing an alpha- hydroxynitrile to the corresponding acid is selected from cultured microbial alkenyl, alkoxy, (oxy)aryl or (un)saturated heterocyclic group; X is amide group or carboxyl group] or a mixture of an aldehyde of formula II and hydrocyanic acid to water or an aqueous medium together with (bi)sulfite ion or dithionite ion. The reaction liquid C is incorporated with 0.01-5.0wt.% (based on the substrate B) of dried component A, the components are made to react with each other at 10-30 deg.C for 0.1-100hr and the reaction product is purified to obtain the objective alpha-hydroxamide or alpha-hydroxy acid of formula III. |
