PURPOSE:To prepare the subject dextrin containing a specific amount of a slightly digestible fraction having an optimal quality as a food by dissolving a specific roasted dextrin in water and treating the solution with alpha-amylase. CONSTITUTION:Potato starch containing 40-60wt.% of edible fibers is roasted in the presence of a mineral acid (preferably hydrochloric acid), dissolved in water into a concentration of 30-50%, adjusted to a pH of 5.5-6.5, treated with alpha-amylase, further treated with glucoamylasen, filtered, and subsequently purified. The purified product is separated by an ion exchange chromatography, etc., to separate an edible fiber fraction, thereby providing the subject dextrin containing a slightly digestible fraction of 40-60%. |
