PURPOSE:To obtain the title composition having a controlled pH value, improved water release properties, providing a paste made from the starch of the devil's- tongue having excellent elasticity, by blending powder consisting essentially of glucomannan with natural polysaccharide, cellulose and specific microcapsules. CONSTITUTION:For example, 100 pts.wt. glucomannan are blended with 9-30 pts.wt. natural polysaccharide such as carrageenan, 4-15 pts.wt. cellulose and fine acidic microcapsules having 1-1,000mmu diameter prepared by blending fine powder or liquid drops of acidic substance such as acetic acid or citric acid with a hydrophobic substance such as hardened oil in a ratio of preferably (70:30)-(40:60) to give the objective composition. The composition is suspended in water, swollen, glucomannan is coagulated in the presence of an alkali substance at <= the melting point of coat of the acidic microcapsules, heated to >=the melting point and the alkali substance in the coagulated material is neutralized with the eluted acidic substance to carry out coagulation. |
