PURPOSE:To produce a retort processed egg food, having good external appearance and sense of eating and preservable at ordinary temperature for a long period, by sterilizing a processed egg food prepared by using hen's egg, cow's milk, starch and edible fat or oil in a retort. CONSTITUTION:100pts.wt. hen's eggs is blended with 50-100ptw.wt., preferably 70-80pts.wt. cow's milk, 0.5-10pts.wt. preferably 2-5pts.wt. starch and 5-60pts.wt. edible fat or oil. The resultant blend is then thermally coagulated, e.g. while heating at <=75 deg.C and stirring, to give a thermally coagulated material, which is further filled and hermetically sealed in a container, e.g. retortable pouch, metal can, etc., and sterilized while heating at >=100 deg.C. |
