Phenylalanine ammonia lyase enzyme (I) is produced by cultivating a suitable microorganism under aerobic conditions and then subjecting the medium to anaerobic static conditions. - The microorganisms include bacteria of the genus streptomyces and fungi of the genera Phodotorula, Phodosporidium and sporobolomyces including Phodotorula rubra and Phodosporidium touloides.
