PURPOSE:To obtain rapidly Korean pickle of an ascidian having good taste and shelf stability, by dehydrating an thinly cut ascidian, adding a specific amount of salt to it, allowing it to stand for specified time, blending it with seasoning such as a garlic, and cut slices of onion, etc., pickling them, subjecting them to seal- packing immediately. CONSTITUTION:A fresh ascidian is cut into thin slices, dehydrated, blended with 1-2wt% salt well, allowed to stand for about 2hr, mixed with antiseptic natural spices such as garlic, Guinea pepper, etc., and thinly cut slices such as onion, cucumber, etc., pickled, and subjected to seal-packing immediately. |
