A machine for making croissants or pastry rolls has means for conveying a bread web of dough past cutters to a die cutting tool which cuts triangular (or other) blanks from the flattened dough. The blanks are mechanically transferred to adjacent conveyors alongside the cutters which return the blanks towards the front of the machine. The leading edge of each blank is picked up by a roller system to produce a coiled form typical of a pastry roll or which can subsequently be bent to form a croissant crescent. The die punch is hung from a bevelled shoe so that cutters of differing size or shape can readily be interchanged.
