PURPOSE:To prepare an eel boiled down in soy, by mixing an eel broiled without any seasoning or broiled eel out of shape as a main raw material with a minced head thereof. CONSTITUTION:An eel out of shape produced in the step of broiling in or without soy is cut to a piece about 3cm square. On the other hand, the head is heated under pressure in a pressure cooker, minced by a mincing roller, and mixed with the cut pieces. The resultant mixture is then mixed with soy sauce, a sweet sake, sake, chemical seasoning and a perfume, e.g. Japanese pepper or sesame, and boiled down to give a syrupy broth. |
