摘要 PURPOSE:To prepare a high quality processed food in a closed vessel at a relatively low temperature, by integrating a closed-type sauce container in a concentrating apparatus, thereby facilitating the control of the concentration of the sauce and making the sauce homogeneous. CONSTITUTION:Trays 4 containing food raw materials 3 are stacked in an inner tank 5, which is inserted into a closed-type sauce container 1 furnished with a heat exchanger 6 at the bottom part. The sauce is sent to the inner tank 5 through an outlet piping 12 of a circulating pump 11, and the sauce flowed down between the inner tank 5 and the sauce container 1 is sucked through an inlet piping 13 and circulated to the pump 11. The piping 12 is furnished with a branch 38 connected to a sterilizer 39 and a sauce temperature controller 40. The upper part of the container 1 is connected with a condenser 20 through a piping 21 having a stop valve 26 to introduce the condensed water of the sauce steam to a concentration controller 27, and the condenser 20 is connected with a vacuum generator having an ejector 32, etc. By successively reducing the pressure of the sauce, the concentration is increased at a lower temperature and the food raw materials 3 can be treated with the concentrated sauce.
