PURPOSE:To prepare a ''giaoz'' (a Chinese dumpling stuffed with minched pork, etc.) having high food value, by grinding unpolished rice, polished rice flour, etc. in the presence of an aqueous solution of a noodle improver, adding the emulsion thus obtained to minched pork, etc. and wrapping the mixture with a pastry shell. CONSTITUTION:An aqueous solution of a noodle improver is added to unpolished rice, rice with embryo buds, or embryo buds of rice, and ground to obtain an emulsion. The emulsion is added to the raw materials of the stuffing of ''giaoz'', and the mixture is wrapped with a pastry shell and steamed or fried with oil to obtain a ''giaoz''. The stuffing is, e.g. prepared from the emulsion of unpolished rice, etc., water, table salt, sugar, a seasoning, soy, cabbage, Chinese cabbage, etc. The noodle improver is, e.g. an emulsifying oil such as a glycerin fatty acid ester, a sorbitan fatty acid ester, etc., a sizing agent such as arginic acid propylene glycol ester, etc., a thickener such as potassium pyrophosphate, etc. |
