PURPOSE: To obtain a microcapsule including a natural carotenoid, having a high strength, hardly undergoing the oxidative deterioration, capable of being stably blended in a tablet etc., and useful in foods, medicines, etc. CONSTITUTION: This microcapsule is prepared by emulsifying an oily phase to be a core material in an aqueous phase which is a film-forming component, forming an O/W type emulsion having 0.001-5μm average oil droplet diameter, then dispersing the resultant emulsion in food oils and fats, cooling and solidifying the dispersed microcapsule casing and forming the microcapsule. The core material in the microcapsule comprises a natural carotenoid (e.g. palm oil carotenoid), food oils and fats (e.g. corn oil), an antioxidant, etc., and the film-forming component contains gelatin, an antioxidant, a stabilizer, sugars, etc. When a gelatin having >=250 Bloom jelly strength is used, the capsule strength is raised. The weight ratio of the palm oil carotenoid to the food oils and fats used is (20:80)-(50:50). The microcapsule is formed into tablets having 50-3000μm average grain diameter by using an excipient. |
