A freezing additive for foodstuff based on minced flesh in the form of powder the particles of which have a size of 100-1500 microns (200-100 microns) and comprise (i) a core based on sugars and/or polyols and 0-20 wt.% of at least a phosphate w.r.t. the sugars and/or polyols, (ii) a first coating based on one or several emulsifiers and/or fats, the coating comprising 0.5-30 wt.% w.r.t. the core, and (iii) a second outer coating comprising a powder suitable for preventing re-agglomeration of the particles, and in amt. of 1-25 wt.% w.r.t. the core. USE/ADVANTAGE - Partic. for use in minced fish free from skin and bones and more partic. Surimi which is preserved in the frozen state. The additive does not form lumps even after prolonged storage. |
