PROBLEM TO BE SOLVED: To provide a method for producing an edible oil and fat emulsified product containing edible oil and fat of higher concentration, bringing about excellent feel of oil body taste, and including high thawing resistance and heat resistance when added to food and drink.SOLUTION: This method for producing the edible oil and fat emulsified product made from an emulsifier of 4-14 HLB, edible oil and fat, and water includes (1) a first process of dispersing the emulsifier in water to form emulsifier minute particles of an average particle diameter of 10-600 nm, and (2) a second process of adding the edible oil and fat to the emulsifier minute particle dispersed aqueous solution prepared in the first process, and emulsifying the product. |
