摘要 FIELD: food industry.SUBSTANCE: invention relates to production of kvass. Preparation of recipe components comprises extraction of thyme with liquid carbon dioxide to separate corresponding miscella. Sunchoke is cut, dried in microwave to a residual moisture content of about 20 % in power of microwave field, providing heating to a temperature within sunchoke pieces 80-90 °C, for at least 1 hour, roasting, impregnation separated miscella while increasing pressure, releasing to atmospheric pressure while freezing sunchoke. Then crushed and mashed together with leavened bread and hot water and settled three times with separation of liquid phase from pulp to obtain kvass wort. Thereto was added 25 % formula amount of sugar as a white syrup mixture is fermented with pure cultures of yeast kvass race M and lactobacilli races 11 and 13, blended with remainder of sugar syrup as a white and dispensed.EFFECT: method reduces duration of process and increases foam stability of end product.1 cl
