The present invention relates to a method for preparing flatfish jerky. More specifically, the method is used to prepare high-quality flatfish jerky by improving the flavor and texture of the flatfish meat through a low-temperature aging process before drying. The method includes: a separation step of separating the flatfish meat from a living flatfish; an aging step of aging the flatfish meat; and a drying step of drying the flatfish meat aged in the aging step.
