摘要 The present invention relates to a manufacturing method of a savory sauce using pen shells and a savory sauce using pen shells manufactured by the method wherein the savory sauce includes hydrolysate from the internal organs of the pen shell and extra savory ingredients and uses the internal organs of the pen shell, thereby reducing bitter taste and increasing flavor. The manufacturing method of the savory sauce using the pen shell comprises the steps of (S1) extracting the internal organs from the pen shell and washing the same; (S2) treating the washed internal organs of the pen shell with heat and cooling the same; (S3) manufacturing hydrolysate by adding enzymes to the cooled internal organ from the (S2) step.
