The present invention relates to a method for preparing sausages containing pork skin collagen. According to the present invention, there is provided a method for preparing an easy-to-eat meat product, that is, sausages containing pork skin collagen, from the pork skin rich in collagen, even without a separate collage extraction process. Therefore, a meat product containing plentiful collagen can be prepared in an economical manner in which a separate collage extraction process is not conducted, and the added value can be increased by utilizing the pork skin as a raw material of collagen food.
