PURPOSE: A producing method of breakfast cereals using a fermented soybean composition is provided to obtain the cereals without the unique bad smell of fermented soybean. CONSTITUTION: A producing method of breakfast cereals using a fermented soybean composition comprises the following steps: maintaining the water content of fermented soybeans without the bad smell in 40%; drying the fermented soybeans hot air, and compressing the dried fermented soybeans into the thickness of 3mm; frying the compressed fermented soybeans using soybean oil at 50 deg C; and mixing the fermented soybean composition with 0.5% of sugar and 10% of flavoring agent.
