<p>Cheese curd mould arrangement for draining whey and forming cheese is used for producing soft cheese e.g. Camembert. It comprises conical mould tops and cylindrical, perforated moulds, each having at least 2 pairs of projections in their outer walls. The projections define between them a groove which engages apertures in mounting plates. The assembly is placed on a draining plate. The individual mould tops and moulds sit in the mounting plates with slight vertical and horizontal play so that upon deformation of any parts, a fit is still ensured. Parts are exchangeable.</p> |
