A method for preparing a ginger extract, and a ginger extract prepared by the method are provided to increase the content of gingearol in an extract by the enzyme fermentation of honey. A method for preparing a ginger extract comprises the steps of drying the washed ginger with hot wind or sunlight to a water content of 20-30 %; chopping the ginger by a thickness of 1-4 mm; mixing the chopped ginger and honey in a ratio of 1 : 1-2 by weight; and fermenting the mixture at 35-45 deg.C for 3-4 days by enzyme fermentation. The prepared ginger extract contains 0.4 wt% or more of gingearol. |
