PROBLEM TO BE SOLVED: To provide a surfactant having excellent pH stability and surface-active property and, nevertheless, low frothing property and usable in various application fields. SOLUTION: The surfactant having low frothing property is composed of an alkyl ether and/or alkenyl ether of sucrose produced by etherifying the OH groups of sucrose with 8-24C alkyl or 10-24C alkenyl groups at an average degree of substitution of 1-3.
