Production of low lactose animal milk consists of addition of enzyme, to hydrolyse the treated milk to accommodate lactose intolerance

The preparation of low-lactose animal milk comprises addition of b-galactosidase enzyme to the milk after standardization or e.g. homogenization, pasteurising, sterilization and UHT treatment. The enzyme proportioned to hydrolyse some of the milk lactose, yields milk for consumption e.g. by humans with lactose intolerance.
