PROBLEM TO BE SOLVED: To provide a general-purpose method or system which can estimate the quality of food and drink. SOLUTION: In the method or the system for estimating the quality of the food and drink, the quality of the food and drink is estimated by measuring the extremely faint emission of the food and drink whose high-temperature heating sterilization process has been finished. In the method or the system for the estimation of the quality, the quality to be estimated is preferably a sterilization intensity or a preservation history loaded on the food and drink.
