PRODUCTION OF COATED SARCOCARP

PROBLEM TO BE SOLVED: To provide a new method for producing a coated sarcocarp characteristic of using a solid-liquid catalytic reaction employing a soluble cation material as it remains powdered, thereby enabling an easy coating treatment for sarcocarp, and capable of well forming the strong and uniform coating film. SOLUTION: This method comprises: allowing a soluble bivalent cation material e.g. calcium lactate as it remains powdered to adhere to the surface of wet sarcocarp; immersing it in a coating agent solution adapted to form a gel by reacting with a cation e.g. sodium alginate; thereby forming a gel coating film on the surface of the sarcocarp; and encasing the thus coated sarcocarp together with a syrup liquid for heat treatment, thus strengthening and pasteurizing the gel coating film. This makes it possible to easily form a uniform and strong coating film of cation crosslinked hydrocolloid gel on the surface of e.g. sarcocarp, in the past the formation of such a film has been difficult and no good in operating efficiency.
