A preparation of Pyrococcus furiosus extracellular alpha -amylase is disclosed. In one embodiment, this alpha -amylase has an optimal temperature of 100 DEG C, a pH optimum of 5.5-6.0, and a half-life at 98 DEG C of between 12 and 14 hours. In another embodiment, the present invention is a gene construct encoding an extracellular alpha -amylase with an optimum temperature of 100 DEG C. |
