FIELD: food-processing industry. SUBSTANCE: continuous doughing unit has dough mixing machine, belt-type dough fermentation conveyor, charging device positioned between dough mixing machine and conveyor and control unit connected to them. Charging device has two parallel belt conveyors. Dough fermentation conveyor is made from separate horizontal sections arranged one above another. Each section has endless belt and positioning mechanism with speed regulator. Leading portion of each lower section extends beyond tail portion of upper adjacent section. EFFECT: increased efficiency, improved quality of dough and enhanced reliability in operation. 15 cl, 6 dwgn
