PURPOSE:To provide a process for the preparation of carrot juice capable of giving a high-quality carrot juice in a high yield. CONSTITUTION:A vitamin C component and/or a citric acid component are added to carrot while crushing or cutting the carrot and the obtained crushed or cut material is heated to inactivate the enzyme. The treated product is squeezed with an extruder having two screw shafts rotating in different directions. |
