PURPOSE:To obtain a red wine raw material capable of imparting a flavor such as a taste, an aroma, a rich taste, etc., of a red wine to a dish using a small amount thereof by adding a specific ingredient to a concentrate of the red wine and a wine perfume. CONSTITUTION:This red wine raw material is obtained by mixing a mixture of (A) a red wine concentrate at about 3-6 times concentration degree with (B) a wine perfume with a nearly equal amount of (C) a concentrate of a residual liquid after distilling the red wine and collecting the distillate. The concentration degree of the ingredient (C) is preferably 10-14 times. The raw material is useful for imparting the flavor of the red wine to a seasoning sauce such as demiglace sauce. |
