PURPOSE:To provide a processed KONJAK (paste made from the starch of devil's tongue) having the form of dried rice grains, giving the palatability similar to cooked rice and usable as an additive for cooked rice without giving disagreeable feeling to the palate by using a KONJAK sol derived from KONJAK powder, and insoluble calcium as a main raw material. CONSTITUTION:This processed KONJAK can be produced by mixing KONJAK powder with starch, adding an insoluble calcium compound to the mixture to form a KONJAK sol, kneading the sol together with lime water, forming in the form of rice grains and gelatinizing by heating. The obtained KONJAK having the form of dried rice grain keeps the rice grain form even after drying, is regenerative with water and gives the rice-like palatability. |
