ALLYL ISOTHIOCYANATE-CONTAINING COMPOSITION AND ITS USE

PURPOSE:To obtain an antimicrobial composition extremely readily usable because of its properties and excellent water solubility by combining a polyhydric alcohol which may contain an aldehyde or a ketone with allyl isothiocyanate. CONSTITUTION:Allyl isothiocyanate (AIT) having antimicrobial actions such as sterilizing action, antifungal action, mildewproofing action is blended with a polyhydric alcohol which may contain an aldehyde or a ketone to give an antimicrobial composition especially capable of eliminating difficulty in use of AIT, having high water solubility. One pt.wt. allyl isothiocyanate is preferably blended with 1-100 pts.wt. polyhydric alcohol and 0.05-1 pt.wt. surfactant. This composition or its aqueous solution is used for treating foods such as pickle or perishable foods. The composition is also used for retaining freshness of fruits and vegetables. AIT is a component contained in Japanese radish or cabbage and is harmless. A highly concentrated aqueous solution of AIT is obtained by this method.
