A new procedure for determining the quality of crystalline products has the novel feature that a measured quality parameter is converted to a numerical value and is fed into a computer (7) in which it is compared with a preset value and corresponding output signal generated. Also claimed is a device (4) for carrying out the procedure, having a measuring head (5). USE/ADVANTAGE - Especially for measuring the quality of sugar. The quality measurement is achieved in a shorter time and at a reduced cost when compared to currently used procedures.
