PURPOSE:To obtain the title compound useful as a food ingredient industrially and advantageously by conjugating a specific glucosyl group donor to sucrose through linking of glucosyl group at the 1-position to the 6 position of glucose residue of sucrose by using a glucosyltransferase derived from a fungus belonging to the genus Mucor. CONSTITUTION:A glucosyl group donor comprising dextrin of direct reducing sugar (as glucose) having (DE) amount >0.35 and >=3 glucosyl residues or a mixture thereof and sucrose are added to a reaction medium composed of 0.05M acetic acid buffer solution and treated with a glucosyltransferase derived from a fungus (e.g. Mucor javanicus IFO4,570) belonging to the genus Mucor and, by the action of this enzyme, a transferred saccharide whose glucose 1-position is bound with the 6-position of glucose residue of sucrose through an alpha-glucoside linkage, thus giving the objective theanderose shown by the formula. |
