摘要 <p>This invention provides a process for treating cheese with a liquid prior to ripening, which liquid is sprayed with a high-pressure nozzle against the surface of the cheese under a pressure such that the liquid penetrates the cheese surface. The nozzles have a diameter of the opening of not more than 0.3 mm and spray the liquid in a convergent jet, while the cheese and the nozzles are kept in a stationary condition relative to each other. The treating liquid can be brine or a solution of suspension containing substances such as flavorants, colorants, enzymes, proteins, vitamines, minerals, etc.</p>
