摘要 PURPOSE:To obtain the subject material, excellent in texture and preservation quality and useful as a dietary food material, etc., by kneading hydrated and swelled refined flour of K0NJAk (root of devil's-tongue) with a cellulose starch compound and gelatinized starch, treating the kneaded material with an alkali, heat-treating the resultant material, providing a gelatinous material, freezing the gelatinous material and then drying the frozen material. CONSTITUTION:Hydrated and swelled refined flour of KONJAK is kneaded with a cellulose starch compound (added in an amount of preferably 1.5-3.5 pts.wt. based on l pt. wt. refined flour of KONJAK) and gelatinized starch (added in an amount of preferably 5-9 pts.wt. expressed in terms of dried starch) having the gelatinization degree thereof regulated to >=50wt.%. The resultant kneaded material is then treated with an alkali such as an aqueous solution of calcium hydroxide and subsequently heat-treated at about 80-90 deg.C to afford a gelatinous material, which is then frozen and subsequently dried to provide the objective material.
