PREPARATION OF AMORPHOUS PALATINOSE AND PREPARATION OF CONFECTION USING SAME

PURPOSE:To prepare the subject palatinose readily controlled and useful as a sweetener for chewing gums, etc., in an extremely short time without perceiving roughness in mouths by feeding palatinose crystal and water into a specific extruder. CONSTITUTION:Palatinose crystal and water in an amount of 3-9% based on the palatinose crystal are fed into a biaxial extruder constituted of a melting portion heating the raw material at a temperature of 110-150 deg.C and a deposition portion having a barrel temperature of 0-60 deg.C to prepare amorphous palatinose. A palatinose solution containing 70-100 pts. of the palatinose and 0-30 pts. of trehalose and/or any other saccharide is preferably fed into the extruder.
