PURPOSE:To provide an edible meat processed product, having soft texture close to that of raw meat and capable of simultaneously improving aged flavor of the meat without hardening even in heating by including a peptide having a molecular weight within a specific range in raw material edible meat. CONSTITUTION:An edible meat processed product, obtained by including about 0.1-5W% peptide (having 300-8000, preferably 500-5000 molecular weight) in raw material edible meat of cattle, pig, bird, fishes, shellfish, etc., and having light texture. |
