A ready-made mixed salad for sale in air-tight packaging contains at least three non-sterilized components one of which consists of mango, papaya, pineapple or pomaceous fruit or a mixture of several of these fruits and the mango or papaya taste predominates. These fruits are peeled and cored and are covered with a juice which contains sufficient vitamin C to inhibit enzymatic browning of the fruit pieces. The fruit pieces may be cubes characteristic dimensions between 8 and 30mm. A new salad type is thereby offered side-by-side with the established vegetable salads which new salad is tasteful and can be maintained fresh for consumption. |
