PURPOSE:To obtain a starch sugar rich in panose expected to be effective in preventing dental caries, by decomposing starch or a starch-based material with an enzyme capable of producing panose, etc., from pullulan (e.g. neopullulanase). CONSTITUTION:An enzyme (neopullulanase) capable of producing panose, maltose, etc., from pullulan and originated from Bacillus stearothermophilus or Bacillus subtilis is prepared beforehand. A starch sugar containing glucose and mannose as well as panose can be produced by decomposing starch or a starch-based material with the enzyme. The optimum working temperature is 50-60 deg.C when using a soluble starch as a substrate, treating the starch with the enzyme at pH 6.0 for 10min and determining the produced reducing sugar by DN method. The enzyme is stable up to 60 deg.C when treated at pH 6.0 for 30min. |
